Preferably 5 days notice, but we will do our best if you call the day before or day of your event.

How do I confirm my order?

If paying by credit card, we require a card on file and a confirmation email.

A $500 deposit is required on all weddings and full service events to reserve your date.

When do I finalize my guest count and menu choices?

We need your final guest count and any menu changes 7 days before your event. For all weddings and events with staffing we would need your order finalized 14 days prior to the event. Changes requested after these times will be handled on a case by case basis.

On BBQ packages, what is the portion size per person?

An average person eats about a pound of food per meal. Obviously, children and elderly eat less than a pound. Of course, teenagers and football players eat much more than a pound. So if you are feeding a teenage soccer team or a frat party you may want to order some appetizers or a couple of extra trays of food.

We portion our catering packages at about 1.25 pounds per person. We go a little heavy to account for variance, so your first guest has the same experience and options as your last guest.
Remember, running out of food is bad and having leftovers for lunch tomorrow is awesome. The portion size is broken down as follows: 1/3 lb meat, 3/4 lb sides, and 1 bun or piece of cornbread per person.

Whats types of BBQ sauce do you have?

We have 3 types of BBQ sauce. Our House Sauce is a Texas Virginia Hybrid that is ketchup based with a little bit of heat and sweetness. Our Swayze Sauce is a spicy Carolina Style Sauce that is Mustard and Vinegar Based. The Cherry Bourbon Sauce is a sweet Memphis Style Sauce with a molasses base.

Do you have any vegan options?

Yup. BBQ Portabello, Garden Salad with Balsamic Dressing, Fresh Fruit Platter, Grilled Vegetable Platter, Garden Vegetable Platter are all Vegan. If you don’t mind a little honey in your vegan diet, then our BBQ sauces and Texas Caviar are fine. Our Cowboy Beans, Green Beans, and Collard Greens can be prepared vegan at your request.

What does the 18% service fee cover?

We charge a 18% service fee on all full service events. This service fee helps us cover numerous costs associated with your event. The most important cost being insurance. Our company and staff have extensive business and workers comp insurance to work on your premises, we can also provide an extra level of insurance protecting your business upon your request, at no cost. The service fee also covers the rental of all of our catering equipment, disposables, serving equipment, consultation, credit card processing and travel costs. How much does it cost to have my food delivered and what does delivery include?

The Delivery Fee is priced from $35+ depending on distance traveled. Our delivery driver will completely set up your buffet, making the best use of space that you have provided. He/she will also set it up to make it as efficient as possible to serve your guests. We will also be providing 3 types of BBQ sauce, food labels, plastic forks, heavy duty plates, napkins and all the serving utensils needed to serve your food. After the driver has set up the buffet to your satisfaction, he/she will go over the details of the order with you to ensure its accuracy.

How is the food kept hot during my event?

Our food is delivered in insulated food carriers and will remain at proper server temperature for approximately an hour, and remain warm for approximately another hour. If you are planning on serving for an extended period of time or have over 70 guests, we would suggest Chaffing Dish Sets.
